Whether you want a short paddle, or an all day kayaking adventure, you can do it at Lighthouse Lakes. Access from the highway is easy and there is usually plenty of parking. They now have a kayak put in area, so you can back your car right up to the water to unload. There is a huge area of "lakes" and mangrove islands to explore right across the channel. Great for fishing or birding and it usually very quiet once you cross the channel and get a little further from the highway.
